Red snapper veracruz style huachinango a la veracruzana in a traditional veracruzan household you would find papas cambray roasted tiny white potatoes and a bowl of savory white rice served. Place olive oil in a large frying pan over medium high heat.
Veracruz style red snapper. Place fish on grill rack or broiler pan coated with cooking spray. I like red snapper for this but any white flaky fish will work. Sauté until translucent about 8 minutes.
Coat both sides of fish with cooking spray. 1 4 cup finely chopped white onion. Add tomatoes olives capers bay leaf oregano tabasco sauce salt and first tablespoon of parsley.
Preheat oven to 350 degrees. 2 limes cut in half. About 1 tablespoon salt.
4 ripe large tomatoes. Huachinango estilo veracruzano serves 4. Add wine and reduce 30 seconds until liquid is evaporated.
When hot add onion and garlic. Sprinkle fish with cumin salt and pepper. 1 28 ounce can diced tomatoes in juice well drained juices reserved.
1 4 cup extra virgin olive oil. By the way many veracruz style fish recipes call for pickled jalapenos but i think there s plenty of acidity in this from the lime and tomatoes so i like the fresh pepper a little more. 4 8 ounce skinless red or other snapper fillets.
3 large garlic cloves chopped.
